Medicated Sugar Cookies

Everyone loves decorating cookies for the holidays, and what better cookie to decorate than a classic sugar cookie? These soft, chewy sugar cookies are extra special because they’re made with cannabutter. Beware: this recipe calls for 1 cup of cannabutter, so dose your batch accordingly! These baked goodies are easily customizable to include your favorite add-ins candies and toppings.

Ingredients:

  • 2 cups all-purpose flour, sifted

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 1/4 cup sugar

  • 1 cup cannabutter, room temperature (not melted)

  • 1 egg, beaten

  • 1 teaspoon vanilla extract

 

Directions:

  1. Preheat the oven to 350° F. Line a baking sheet with parchment paper and set aside.

  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, and salt. Set aside.

  3. In a medium mixing bowl, using a mixer on high speed, cream together the sugar and butter until it is fluffy, approximately 3-5 minutes.

  4. Add the egg and vanilla and beat well on low speed.

  5. Slowly add in the dry ingredients to the wet ingredients, continuously mixing.

  6. Create 1 tablespoon dough balls. Place the dough balls 2" apart on the baking sheet.

  7. Bake in the oven for 10-12 minutes or until lightly browned.

  8. Remove from the oven and cool 1-2 minutes before removing from the tray and transferring to a cooling rack.
